what should i do?

ok..so i have two of three LOR in...the third one is dragging..
i've talked to the professor about a month ago..and again last week..she still hasn't finished it...
i feel like it's gonna really put me behind...

what can i do..write her an email..or talk to her again..
at the same time i don't want ot annoy her...

Is it possible she doesn't know how much stress this is causing you? I would go talk to her again and try to convey, in a nice but persistant way, that it's very important to you that the letter be finished asap.
It also really helps to give people deadlines. Ask her if she can reasonably expect to complete it by, say, next Wednesday, or else just tell her flat-out that it needs to be complete by X date. That should help her focus on finishing it.
I wouldn't consider this to be annoying either. You need the letter, right? So don't worry that you're bothering her. Just be polite.

write her a thank you note for "having completed my letter. Your recommendation is certainly a very important part of my application, etc. yadda yadda etc."

this has worked like a charm for me.
