When should I submit AMCAS?

I'm a little confused about the process of submitting AMCAS. I am taking my MCAT May 31st, and will get my scores back July 3rd. Should I submit AMCAS before that? If I do that, what do I do when I get my score? Also, I plan to shadow a GP this summer, do I just put that as an "ongoing" activity in AMCAS or should I send a supplementary letter at the end of the summer about it or what?
