Which schools would I have the best chance at getting in?

512 MCAT; 3.97 cgpa; 4.00 sgpa
~100 non-clinical volunteer hours
~ 90 clinical volunteer hours
~ 1800 clinical work hours
~ 1500 hours laboratory hours
~ 90 shadowing hours

Do you have the MSAR ? If not buy it and use it to develop your list. After you do that you can post it here and people will help you add/delete schools. Always start with your state schools. Your chances are best at those schools. OOS public schools are usually more receptive to their own residents so look at stats for particular schools and see how OOS friendly they are. Private schools don’t usually have and IS/OOS bias. Also think about location , weather, urban, rural, suburban etc.. Only you know yourself and what would make you happy or comfortable during med school.

~ 1800 clinical work hours (CNA/PCA)
~ 1500 hours laboratory experience (Diagnostic, not Research - not sure if this makes a difference)
~ 90 shadowing hours in cardiology and pathology
If you live in a state with a state owned medical school, that is your best shot.
