Withhold review of application until minimum or all LOR's received?

Some programs provide the option of withholding application review/interview invitations until all LOR's received, but subsequently provide the option to begin the review when the minimum required LOR's are received.

To provide any helpful context, I'm CA resident with a cGPA/sGPA: 3.72/3.64 and 517 MCAT.

Is there any benefit to either option? I sincerely appreciate your perspective!
