Why would you try to take the DAT without any orgo background? :/ Sounds like you may have tried to rush things.. I would assume there isn't much else you can do for this application cycle. My advice would be focus on your GPA and DAT so that you can be more competitive next cycle.
 
I got my BS in Biology in 2008 at 25 years old. Now I'm 31 and studying for the DAT to apply next cycle for 2015 matriculation. I'll be in my upper 30's when I'm done with dental school and I don't care because it's what I really want to do. Don't worry about your age, you have your whole life ahead of you.
 
Why did you go to Dubai for? Unless you've been partying and wasting yourself the last few years, I wouldn't consider having another degree like that in Civil Engineer a waste of time. Education is good, not to mention not a bad backup career. Now that it seems you have done more than enough shadowing, I would just focus on doing well in the prerequisite classes and the DAT 2nd try. If getting admitted to dental school is a walk in the park, dentistry would get cheapened then likely not as many would want to enter the field.
