If you think they might be perceived as a "laundry list," then group them to give more impact. If you have a lot to say about them, then consider making it a "Most Meaningful" activity so you get 1325 extra characters for your description.

By "Most Meaningful Activity", can I answer with something like "Asian Cultural Clubs" or something like that to reference all of these clubs, or at the very least say something like "lion dancing" and reference two of the clubs that I lion dance in?

I think that "Asian Cultural Clubs" would be a good Experience Name to insert that covers all the territory. You could choose among the pre-selectable categories of Hobbies, Extracurricular Activities, or Artistic Endeavors to tag it. The Leadership component could be entered separately (especially if it's the only Leadership activity), or incorporated into the same description, as you wish.
