SDN likes DO. Have you read the thread on the differences? If you get your GPA up (including sGPA) and do some good ECs (volunteering and clinical either together, apart, or both) you can definitely do that. There are also MD schools that reward reinvention and will likely be understanding of your situation. All schools will look at all college classes.
I wouldn't recommend being picky with where you go to school.

Schools post their average class stats. For schools you are interested in, you can look up the MCAT yourself. Your application year you should purchase the MSAR for more specific data.
 
You need to study up and take the MCAT. How you perform on that will likely tell you right away whether it makes sense to apply any time soon.
 
A number of med schools do not accept pre-reqs taken at CCs. Invest in MSAR Online to find out who does, and who doesn't.

1. Will the community college classes backfire on me? I know CCs are seen as less, and I don't want to be seen as a GPA booster, though they were nice GPA boosters. Uni --> CC is backwards in general, but money was an issue for me, so I graduated early from Uni as well.

CA is one of the least friend for in-state residents. The state is actually a net exporter of medical students. That said, being an alum of UCR is a big advantage for you. Your GPAs so far are fine for any DO school (including mine) but are very weak for MD; almost circling the drain.
2. I would like to stay in the southern California area, my dream school is actually UCRiverside (almamater), but I would just as much take opportunities as Loma Linda (though I'm not religious) and Western Uni (but I've been researching on MD vs DO on this site, and it seems to be kinda frowned upon?) What is a reasonable MCAT to reach for to be safe for these schools, if possible at all.

ALL of your classes will be looked at, but aceing 1-2 years will be good for those MD schools that reward reinvention. Read this:

3. Will they only look at my undergrad or will they look at all the college classes I've ever taken?
 
I think with a steep enough UW trend and a 513+ MCAT, OP is a reasonable contender for MD schools. Look at the MSAR, even some of the TOP schools reward reinvention. ( Not saying you should apply there, I'm just making a point.)UW trend are everything.
Your stats are well above 10th percentile for a lot of MD schools.
