A couple of points --

"Residency" for the purposes of medical school admissions is generally not a simple as "place of residence" so please look twice before you leap.

Second - As noted, your GPA and MCAT are very strong, and deficits in those areas can be difficult to remediate. Also as noted, your ECs are week, and deficits in those areas are SO EASY to remedy!

You're clearly a hard worker -- time to re-prioritize everything to get more hours in before you apply:
  • Shadowing - Shadow a few different specialties, especially primary care. Go for variety here, not necessarily a large number of hours. 40-50 hours total is generally considered enough, but not if 40 of them is plastic surgery. Go for 3 more docs of different types.
  • See if you can volunteer in a disadvantaged medical way-- hospice, suicide hotline, Alzheimer's care, disabled, HIV. Try to find something where you can get your hands dirty and start NOW, so not well-known programs or clean suburban hospitals.
And do take another look at your school list. CA schools are notoriously difficult, so always a reach - even for strong applicants. TX schools have a huge instate preference, though I expect they'll like your MCAT. If you are not "technically" a FL resident, your admissions chances probably go down significantly, so look carefully at that.

Otherwise, you don't have many schools --
