Your post is confusing me. I think you're meaning to write <3.0 but you're writing >3.0 instead. Anyway, if I'm understanding correctly, your entire pre-med sequence has been taken at a CC? It's not going to look good if you're taking all of your pre-reqs at the CC while doing everything else at a four-year. That's going to look like you're trying to dodge the difficulty of doing them at a four-year. And even a 3.5 sGPA is on the low end for matriculating students, depending on your ORM/URM status, so it's not like your sGPA is rescuing you.
Personally, I think you need to do really well on the MCAT in your circumstance, and forcing yourself to self study physics seems like a risky move when you have so much riding on your MCAT score. If I were you, I'd take physics first, and it would probably also be to your benefit to take an upper level science class at your four-year to show you're not scared of university science courses.
