Hmm.... let me throw my two cents:
1) Minority is usually used to describe ethnicity/race. But I guess no one is holding you to those definitions? I personally wouldn't answer with what you said if they asked specifically for minority. HOWEVER, this is definitely FAIR GAME for a diversity question or the often asked question "do you feel you were disadvantaged in anyway" during secondaries.

2) The federal guidelines for the poverty line for a household of 4 is $25,100 (Poverty Guidelines). Take that as you will, I'm just giving that info to you becasue you never want to be in a situation where someone else doesn't think that $40000 is "poor." Just a suggestion and by no means a judgment or belittling of your experience.

3) Well, the immigrant part >,<" unfortunately, I feel isn't as big of a distinguisher as you might think. Especially since you're Asian. A BUNCH of asian applicants were raised by first-generation immigrant parents (some spoke English, some didn't), myself included. So, again, not to minimize your hardships but try to dig deeper if possible.
