when sending a letter of interest (not intent, in my case at least) do you just explain what you liked about the school and your fit? Is it ever appropriate to mention other acceptances or no?

I think it's a waste of time to merely say that you're interested. They already know this when you send your application.

How could one tactfully go about saying "I've been accepted other places, hint hint please accept me?" Any way I try and draft the email, it sounds rude/entitled/presumptuous

This has to have been covered elsewhere in these fora. Do a search.

I've been looking around the different fora, and while there are lots of discussions about LOIs in general, I can't really find examples of LOIs that tactfully mention other acceptances. Does anybody have any examples?

I think the new traffic rules might change the dynamics here because the schools will no longer be able to see for themselves that you have or have not been accepted already and where, and guess for themselves what your preferences might be.

You could say "While I've been fortunate enough to have been accepted elsewhere, of all the schools where I interviewed, Wash U is the one place where I felt the most excited and most comfortable. The school's blah blah blah was amazing, etc. ... I am writing to assure you that Wash U is my absolutely first choice and that if I am accepted, I will definitely choose to attend here."

Fine points (my opinion only - time will tell):
  • DO state that you have an acceptance if it's true, but be humble about it.
  • I don't see an advantage from volunteering that you have multiple acceptances or bragging about which schools have accepted you -- But if asked, it's fine to answer truthfully.
  • Language that is vague about numbers is your friend
  • Don't lie. With the new traffic rules it will be harder to catch you, but don't count on it!
  • Be specific about what you liked about this school.
  • If it is absolutely your intent, say so. BUT - Don't go back on it later. I'm thinking the new traffic rules will also make it significantly more aggravating when a "firm intent" student renegs. If you need to hedge on financial aid, better do it.
