Do what you want to do during this 3 month break. Given all of your hours of clinical volunteering, research etc, you do not need to do anything specific. Most adcoms are not reading your cv so closely that they will be asking questions about a short break - the way things are entered on the AMCAS application does not make it easy to look for gaps like we would do on a traditional cv. The educational writing project and your applications will keep you busy. And pre-Americorps, after all you have been doing, you definitely should focus on your own wellness. Spending time with friends and family is always a good idea, as there is not always enough time to do this once medical school/residency/career hits you.

(However, it is my advice that you not tell your future interviewers that you spent 3 months not doing much bc you wanted to "bulk like crazy".)

Get shadowing, if you don't have it. Other than that, it won't be a problem.
 
Might look bad not doing anything for 3 months during interviews

As others have mentioned your med school apps won’t have your activities organized in a chronical timeline like a CV would be. Instead it’ll be activities with a start/end date. Honestly, most schools won’t even realize you had a gap in employment, especially if you had activities such as volunteering or shadowing that span that time.
