Depends on how weak your stats are.

If they are so weak that you need to retake courses, bump GPA, retake OAT so on- don't apply until you finish those things.

If they are weak but still meet bare minimum, apply as soon as cycle opens.
 
I had weaker stats - 2.9 gpa in undergrad and 310 OAT score. I had to apply in December this cycle and got 6 interviews basically right away and was accepted to 1 school so far.

This is my second time applying and I think you're right about waiting until the schools have chosen the best. Last cycle, I applied as soon as possible (Aug/ September). I was interviewed but they didn't invite me until February/ May anyway after they had their pick. Hope that helps!

Wow! Thank you for your reply 🙂 Did you change anything on your application the second time around? And based on your personal experience, would you advise me to apply later, or to still apply early just to be safe, even if I won't be receiving interview invites until later on in the cycle?

from your good experience and from my bad experience, if the stats not too high. better apply late wait for your latest exam.
my OAT 330/330 but I got 3 rejected. because of low GPA, if I wait to my last semester exam result, my GPA is 3.1. but too late
becuase I applied to early and got rejecte before my last exam.

Yes, I took classes to improve my GPA to a 3.1 but it's clear that my main undergraduate grades weren't strong. I wrote about it in my supplements and I conveyed what I did wrong and was genuine and confident in myself during my interviews. I think that is where it matters too if you can convey it without putting yourself down.

In my opinion, I think a good time is November/ December. Nothing later

This. You shouldn't be applying early if your GPA's less than let's say 2.9. If it's less than 2.9, I recommend on improving it. Applying early with decent stats should definitely give you an advantage. I applied in December and looking around, that's around the average time that most people apply around. Applying before November would probably be considered early when it comes to optometry.
