Would schools even disclose this information?
My first guess is no. An... acquaintance of mine recently stated I shouldn’t apply to school ‘x’ because most of their acceptances have been given out by October, and even quantified and said something to the effect “there’s only 15 seats remaining”. I didn’t even acknowledge this comment but can’t help to think it was untrue.
Is there any way to know if a class is filling up or is this a bunch of malarkey?

I doubt it. A nurse friend of mine didn't apply to Stanford until late September and still ended up getting in at an Ivy league. October is still very early for a majority of schools.
