I presume that you did this as a student and/or a volunteer and not as a paid worker. So, yes, it is harder to come by evidence that you put in the hours. That said, particularly if the end result was a publication with your name on it, no one is going to be tracking down the PI and confirming this. There are just not enough hours in the day for that level of detail. As long as your name is there and that checks out (looked up on Google Scholar or a similar search engine), you'll be fine.
 
What would motivate a school to check 10-15 activities of 100-150 matriculants. That's 1,000-2,250 activities. Would it really be worthwhile to spend time checking on these things so as to throw out a M2?

If it comes to light that a student outright lied/fabricated something on the AMCAS applicant they can be dismissed. If you claimed to have been awarded the Purple Heart and you weren't, that is easily verifiable and if not taken at face value on the application, it would be easily verified.

No one wants to play gotcha but the penalty for outright lying has to be severe so as to keep people from doing the wrong thing.
