What was your score breakdown for both attempts?

Without a score breakdown, and assuming your scores are evenly split, I don’t think I would recommend a third MCAT attempt. You already significantly improved over your first score. For an additional retake to make a difference, you’d likely need to 5 or 6 points higher. At 509, youre a couple points below the median for matriculated applicants. Luckily your GPA is good. I think you would have more success if you applied to more than 15 programs and had your applications in before September. You may still have success with DO programs this cycle.
 
You should’ve applied to at least a few new DO schools to increase chances of acceptance (e. g. Campbell at least) 500 and 509 - you need a higher MCAT to be competitive to MD. NY resident should’ve applied to Touro NY, NYITCOM. Going for just DMU and PCOM (established DO) as a non-trad is risky. I mean what’s like a few hundred dollars (like 200USD you could’ve applied to like 3-4 more schools) compared to having to go through another cycle with reapplicant status?

The first attempt was technically balanced lol but had a sub 125. My strong suits are CARS and P/S.

2nd attempt 127/127/125/130. That 125 is bad news bears I know.
It’s not great but it is above a potential sub score cutoff which is good. Even with a 125, I still don’t think a retake is advisable. I would work on other aspects of your application and apply early/ broadly as Faha mentioned.
 
I do not think your stats or EC’s are your problem. I mean, your shadowing is pretty low, but everything else you’ve said is pretty decent. You need someone to comb through your application and find what is wrong. Specifically, your personal statement and all of your secondaries.
