Stats is a science. It is a branch of mathematics.
That said, better to get a letter from someone who has taught a humanities coures: English, foreign language, philosophy, theology/religious studies, art history, architechture, music, film, communications, etc. Almost every school has some gen ed requirements such that you will have taken a few classes along those lines. We are looking for an assessment of your critical thinking skills, communication skills (written and verbal), ability to listen to and respect different points of view, to make a case in a group discussion for your point of view, and to work well in groups.
 
I used stats as a non science teacher with success. Granted, I did a postbac for science classes only as my original degree was 10 years old and unable to get a LOR from anyone that far back. I had other letters as well (work, etc).

I will say that none of my acceptances require a non science letter (other interviews did though), so perhaps it is an issue 🙂
 
Send an email (obviously). If you can attach a paper or other item you wrote in that class as a memory jog, that would be helpful. Most of us have some extra work due to the coronavirus but writing letters has always been a responsibility and most of us won't shirk that duty just because we're working from home and teaching online.
 
I am also curious if a professor of a human development course would be acceptable for nonscience LOR? Especially if considering it is listed as a psychology course
