My guess is that watching procedures on Youtube would not be considered shadowing. Unfortunately you just can't interact, ask questions, and observe other aspects of the office (front desk, business, etc.) the same way you could in person. These are unprecedented times though, and dental schools might be understanding. I suggest reaching out to dental school admissions and asking them. That way you'll get a definitive answer.
