ECs won't save you from the fear that you have trouble with more rigorous coursework. I suggest applying while doing a DIY post-bac or SMP. Get MCAT out of the way first.

I did get the MCAT out of the way with a 517.

Do you think that it’s okay to take one post bacc class while working (I don’t think I could handle more than one) or should I quit my job eventually and take a full semester while applying next year?

Or should I continue to take the risk I’m taking now and to not take classes and just to work on my EC.

A single post-bac class won't be enough data points to convince an Adcom that your troubles are over. Try two classes/semester if $ is an issue.
