Most schools require 2 semesters of Orgo w/ lab. I would just go ahead and take the second semester. Orgo 2 is much easier than Orgo 1 IMO.

Agreed. Organic II was much easier for me than organic I.
 
So i looked on this med school's website and their admission requirements say Orgo with lab: 1 semester. Does that mean i only need orgo 1 and orgo 1 lab? If it were to say Orgo with lab: 2 semesters, does that mean I need Orgo 1 and lab1 alongside Orgo 2 and lab 2?

Also, I took Orgo 1 over this past summer (got an A) just cuz i wanted to make my junior year somewhat easier, have all my prereqs done before studying for the MCAT, and have more time to focus on MCAT studying. Does this look bad? I'm about to finish all my prereqs by the end of sophomore year and wanted to know if this would seem like im just rushing everything.

You could call and clarify, but as others have pointed out, probably best to just knock out the second lab because other schools may be more picky than this one.

With the level of competition of across medical so medical schools so high, applicants must apply broadly across the schools that fit their GPA, MCAT. EC, and mission. Since you need to take prereqs 2,3,4 years or more before you apply and before you know what your MCAT and GPA will be, students should prepare with the broadest array of prereqs to be positioned to the broadest array of medical schools. Not doing so means you are already self-selecting and thus limiting the pool of schools that you can target at application time. This is will also help lay a foundation for the MCAT. Therefore, I strongly recommend all students take the traditional / classic array of prereqs which would include 2 semesters of Organic

You're not doing yourself any favors skippping ochem 2. You'll need it for the MCAT as well as for med school (biochem and other subjects build on ochem, etc.).
