Congratulations on the manuscript acceptances! I'm not an authority/experienced on this, but I would think that new publications give a good reason for an update, even pre-ii. Maybe you can check which schools are more receptive to update letters and start with those first.

In terms of framing the update, you can probably just describe the paper, what you did, and for the unpublished one, give what the citation will be. Otherwise, you might want to wait until that one is actually searchable.
