Please follow the WAMC template. Your experience details are important, not just the hours. Maybe some more shadowing (get closer to 50 hours).

If you know your MCAT is holding you back from a shot at the brand-name schools, why are you taking the shot? You can always get your residency training at brand-name schools or their affiliated hospitals.

You are in prime position for the top Texas in-state programs, details pending. Is there a reason why you wouldn't go to UTSW, Long, TxA&M, or any other Texas school?
 
Is your only non-clinical community service your STEM non-profit organization, effectively speaking, since you have claimed 1000+ hours? The other 200 hours comrpise more teaching and mentoring, so they show your academic competency, as would your Goldwater and research experiences. Where are your activities where you demonstrate stretching out of your comfort zone to help people who have needs? It is not clear you are comfortable being with uncomfortable people.

What advice have you received from your prehealth advisors?
