5 MD interviews with 0 acceptances, all waitlists/deferrals thus far into the cycle. Is this normal for someone who eventually gets accepted? Should I expect to get off a waitlist at all? Thanks in advance

It’s hard to say without knowing your stats. Are you above average or below average? A school wouldn’t invite you if they had no intention of accepting you, but there are still tiers to students that they invite. An amazing interview can help overcome a weaker applicant just like an average interview can lower a strong applicant. So it’s hard to say. Getting waitlisted at 5 of 5 interviews is not “normal” though, but your chance of moving off of one of those 5 is pretty good since you have so many opportunities now
 
My stats are 3.85 gpa and mcat is 511. Have plenty of experience, some publications. I didn't feel that confident in any of my interviews

Stats wise you’re definitely competitive! If more interviews come your way then be sure to portray confidence during your interviews. I know it can be easier said than done, but it really is important. You’re intelligent and have worked hard, you deserve to be here. So there is no reason for you not to portray that confidence to the admin committees. But you have good chance for movement off one of your 5 waitlists, so stay hopeful. Best of luck
