I know that the academic update starts november 16th but my classes wont be completed by december 16th so my question is do i have to wait until december to update my courses or can i just go ahead and update it in november?

I believe you just update your latest courses you're taking, even though you haven't gotten your grades, you just have to put "grades pending". If you had taken a course and gotten a grade since the time you've submitted your AADSAS then you'd put the grade that you got. You just basically have to fully update your course work in whats being pending and what you've completed. At least this is what I was told by the schools that I've applied to.
 
Isn't it true that AADSAS only allows a one-time academic update? If so, wouldn't it be better to wait until the final grades were in to help one's cause?
 
Are there other dates besides the one given in November? I thought this was your only chance to update your grades.

Some of the schools I've interviewed at want to know my grades now before making their decision for December, so I would think the best thing to do is update your AADSAS before December.
