I initially thought it would go under plain volunteering, but I observed a lot of dentistry hence the question. Perhaps I should reach out to the schools I'm interested in.

I previously asked an admissions officer at a school this question and she said that MOM projects are considered volunteering, not shadowing. I put it in the Dentistry Experience section but marked it as volunteering (not job shadowing). But if your Dentistry section is already full and you have room in your Volunteer section, it would also be appropriate there. Hope this helps!
Yes, but if you have 100+ hours otherwise and little other volunteer work, I'd put it as volunteer work. The admissions people will know what it is and what is involved for a program like that so, really, it probably doesn't matter where it goes.
