So basically nearly every Friday I help my dad in a family business. I do not get paid and it is an on and off sort of thing. Would this be considered volunteering on my AADSAS application instead of work because I do not get paid? Also I have no idea how many hours I have over the years, its probably in the thousands...

And also I would have to put my dad as my reference. This would probably lower the value of it all.
Should I even include it in my application?

I would put it in my application for sure, however I would put it as work experience instead of volunteering, because it is your dad's business and it is a business after all.

Yeah, put your dad as the contact, it's a family business that you worked in so there's no-one else who could verify that and won't take away from it. I would try to roughly estimate the best you can the amount of hours. Putting a random number in the thousands without any way of actually knowing isn't what I would do and could look a bit strange since it is your family. Most importantly, in the description explain some skills or something you learned doing it and what you took away from it
