From what I know AAMC does not have a list that says what percentage of those applicants were accepted.
Regarding whether or a not a school is listed, it simply has to do with whether or not they had the minimum quantity of applicants of said race/ethnicity applying from the school. Look at the top of each chart. For example, the Hispanic/Latino chart says "Undergraduate Institutions Supplying 10 or More Hispanic, Latino, or of Spanish Origin Applicants to U.S. Medical Schools, 2016-2017." If your school doesn't have at least 10 Hispanic/Latino applicants (or atlas 10 who identified as such) then they won't be put onto this list and you can't see their numbers.
