I am planning on applying after my junior year (about June or July or so).
My gpa is kinda low so that I am thinking of taking some summer courses to boost up my GPA a little bit. So, here is the question. Do dental schools count my summer classes? Or do they just count until my spring semester of junior year? Or do they count the fall semester of senior year as well?

It depends on when you submit your AADSAS. If you wait to submit until your summer grades are in and then have your transcripts with summer grades verified, then they will see those immediately. If not, then they will see your summer grades at the same time they see your fall grades, when you do your academic update in Dec/Jan. For many schools this is pretty late in the game, but you have to weight how much a couple of summer classes can bring up your GPA against the benefits of submitting early.
