So basically when you apply to dental school you will be doing so the summer before your senior year and you will be using your GPA for up through the junior year.

So my question is do schools check what your senior level grades are? If not, then what about taking your hardest classes (not prerequisites) your senior year, so if your grades arent as good it wont matter much?

Grades ALWAYS matter! If your senior year grades are bad, dental schools have the right to revoke your acceptance. However, some schools have a provision that you need to maintain C's in the reainder of your classses. You might be on to something, but it sounds risky.
