while it is generally agreed upon that any given med school will not prevent you from getting a good shot at a residency if choice but what if you want to go into academic medicine and have 0 interest in private practice or non major teaching hospitals. Does the med school you go to matter

Define what you mean by academic medicine. That term encompasses a huge amount of things.
 
Frankly, many of the people I've seen in academic medicine either attended state-sponsored medical schools, married money or inherited it. Put the other way, many people who would do well in academic medicine seek out private practice because it pays better and their debt is too high to choose a lower paying option.

Working in a hospital attatched to a well known med school/residency program where I will be in an environment that requires me to mentor residents, do research, and potentially lecture classes

Is the pay always all that different? In the hospital I worked in attending surgeons were making between 500 and 800k base and anesthesiologist we’re making 300-500k... then again it was in a very expensive metropolitan area

Yes your medical school matters. As will your residency and connections you build along the way.

Yes. It's pretty well known that private practice docs make somewhat of a decent amount more than their academic counterparts.
