I have new information regarding research and medical activities (shadowing and traveling). Do I write up a small bullet point sheet with current endeavors (including contacts/institutions) to send to medical schools or would that be bothersome? Thanks

Yeah def send it in. It will show admissions that you're continuing to build your application... and they may see something that entices them to send you an interview invitation.
