Adding additional schools later

I am taking the DAT in about 4 weeks, but could submit pretty soon here if I wanted. I have reservations about forking out a grand plus on multiple schools when the DAT is a bit of a wildcard yet (if I don't do as well as I want that's just money gone with little chance). Is there any disadvantage to applying to just one school now (so my gpa will be calculated and all that jazz) and then if my DAT scores are good, adding the rest of the schools?

no disadvantage at all. You can add schools later.
