My student host for one of my interviews reached out to me and told me I could message him over facebook. Does this mean I can friend him on facebook (and then message), or just message without adding as a friend.

don't overthink this - they basically asked you to friend them

yeah, totally fine to friend your host especially if they suggested it. I never friended any of my hosts (or people I've hosted), but if one of them had added me I would have been totally fine with it.
