I currently work part time as a pharmacy technician in a hospital. After completing a speech class next month, I will have all pre reqs done to the pharmacy programs I will be applying to. I'd like to work full time starting this fall, but would it be better to take additional courses (on top of my finished pre reqs) and continue working part time? Would an admittance committee frown on an applicant not taking classes a year prior to desired admittance?

Not sure where you are applying to, but if I were you, I would take a few courses part time even if your prereqs are done to add to your transcript and academic history. It is great that you already have pharmacy experience, so definitely keep working part time, but I think it's worth it to show that your academic pursuits go beyond just finishing the required prereqs for pharmacy school.
