Advice on where to begin

Hi group. I'm looking to enter medical school in the next couple of years. I'm working full time and taking courses one at a time, when I have time. I'm way out of the loop as to where I should begin with the non academic "prerequisites" to entering medical school.
I'd like some insight into how people are keeping track of their observations/shadowing of doctors, keeping track of volunteer hours. How do you "prove" you did the work you claim? Any recommendations as to what people did to enhance their obs. time (ie how did you make the most of your time with docs, what to do, what not to do?)

A lot of the app process is based on your word. I've done many hours of hospital volunteering. No need to turn in a timeslip to AMCAS. On the other hand, if you are doing research, volunteering at a homeless shelter, etc. A good way to show your accomplishments with that activity is to get a leytter of rec. But don't worry about "proving" you did stuff. They take your word. You must provide contact numbers for activites you have participated in and list on your primary. Rarely, if ever do they check those though. Your secondary apps usually don't ask for contact people(usually they'll jsut refer to your primary if they want that info).
