Am I able to take Calc 2 online?

I know it's not needed for prereqs

I have credit for calc 1 already but I only have that through AP credit.

Am I still eligible for most all the schools that require calculus without taking an in-person course?

Med schools do not prefer online courses. Some schools need year long Calc/statistics which I would take them in class. I took precalc online but calc1 and stats in class.
 
I cannot speak to how the admissions committee will view this, but before doing this, I would make sure you have solid supports in place for if you don't understand something. In-person math tutoring, in-person office hours, etc - Make sure there are more supports in place than just an email for the professor. Calc II can be really conceptually tricky, often even for students who did well in Calc I.

Would they accept calc 2 instead of calc 1 then if they only required a semester?

If a school only requires 1 semester calculus, you’re probably fine using calc II to fulfill that requirement - but don’t take it online; many schools do not accept any online prerequisites at all.

To maximize your competitiveness for as many medical schools as possible, plan on taking 1 semester calculus and 1 semester stats (both in-person at a 4 year university!) before you apply.
