So right now I'm sitting at:

2.98 cGPA
2.7 sGPA
499 1st MCAT
507 2nd MCAT
URM
Decent ECs. Research, clinical/nonclinical volunteering, LORs should be good, Leadership roles.

I've sent in applications to:
LECOM-Bradenton
PCOM-Philly
UNTHSC
DPMS
TTUHSC

Just waiting on supporting materials to get there to be complete.
Are there any other SMP's that I should target?

Is there no way to get your cGPA to a 3.0 before the SMP? How many undergrad credits do you have?

My cGPA will be at 3 after this semester, but I feel like applying after grades are posted (end of May) will be too late in the cycle. Most programs are rolling admissions so I want to apply early. I have close to 120 undergrad credits.

"Rolling" admissions has no effect on the timing of evaluation of the application. It has everything to do with the notification of the decision. Rolling decision would be a better term.
An early strong application works everywhere.

So applying now with a 2.98 is better than applying in May with a 3.0, correct?

Early and strong are the keys.

So would you consider 3.0 significantly stronger than 2.98? So much so that it's worth waiting 5 months to apply while others are being offered seats?

Thanks! Any reason you suggested these schools?

They are prestigious programs with some of the more impressive med admissions lists. Note that most of these have low linkage rates so their goal is to get you into a med school, not necessarily theirs.

And are they accepting of sub 3.0 GPA? Looks like Loyola is not per their website.

That's something you'll have to research on your own. The majority of programs have very helpful admissions offices in my experience, so make a few calls or emails to the offices of programs you are interested in and they may help you get a better idea of your chances.

@EAPoetic
What did you change in your study method that helped you score higher on your second attempt on the Mcat?

I was able to study more effectively. I set up a better MCAT study schedule and stuck to it. RESPECT THE MCAT. First time around I had too much going on to give it the attention it requires. Big mistake.

With sub 3.0 cGPA AND sub 3.0 sGPA? I don't think URM advantage is that big.

Are you getting into Harvard or Yale with those stats, no. But if you craft a well thought out list of about 25 schools, assuming your essays and ECs are up to par, you will get in 1. Ive witnessed it this cycle, take advantage of it. If not MD, easily D.O.

Wow really? Everything else I've come across suggests otherwise. Interesting!
@Goro would you mind chiming in on this?

I beleifve that the OP is inquiring as to SMPs to apply to, not medical schools. At this point OP is not ready for med school.

SMPs are a dime-a-dozen....so one just needs to be good at google in finding a program. Drexel has two, I believe. Then there BU, RosyF, Mt Sinai, all Touros, Western, Gtown, KCU.

[UPDATE]

REJECTED from LECOM-Bradenton MMS. Starting to get worried that I won't get into one of these programs.
Any advice would be greatly appreciated.

BU, Gtown, UCinci, Tulane, Drexel, Tufts, Loyola. These are the big time SMP’s built for people with around your stats. They are quite forthcoming and will be of endless help to your application.

If you are more of the linkage type, check out some programs at specific schools; if you are a west coast person then look at some of the UC’s programs that will help you matriculate. Some of these programs are designed for URM and increasing diversity in medicine. Google around and check it out. UCIrvine has a cool program, you could start with that if it interests you.

Good luck this year.

Thank you for the input! I'm going to take a good look at those programs. I'm just worried that being sub-3.0 will result in 0 acceptances.
Any advice on what to do if that's the case?

Post-bacc I guess. But I think there are enough programs out there that one of them will certainly bite.
