UC Berkeley says they want applicant to have completed:

Immunology
Microbiology
Human Physiology
Human Anatomy
Statistics

Most other schools seem to indicate they want the completion of:
Statistics
Microbiology

My major, Biochemistry, required none of the above classes. I graduated the past June.

I'm hoping to apply Optometry @ this coming cycle of March 31st.

Will the schools still look at my application and temporarily disregard my missing prerequisites and just let me take the classes as a Post-Bacc in the Summer from June to August?

I think it might be tough (maybe impossible, based on availability of classes) to take all those classes in one summer. I would start taking those classes as soon as you can. Possibly do them Winter session, Spring, Summer (unless you're possibly taking any of them now). Also, I think you might have a hard time finding Immunology offered at a cc. Don't quote me on it, but I think all the cc's I looked at in all LA county didn't offer it.

Definitely call their admissions and ask them.
 
Also, I'm not postive, but I'm thinking it might be a stretch that they would allow you to take so many pre-reqs after your Optomcas GPA has already been calculated, as five classes is a decent portion of their pre-reqs. This fall's grades are the last ones you can submit.
 
Those are all upper level sciences (except for stats). Instead of spending the time and money to take those class, why don't you just apply at other schools where those classes aren't required?
