Amcas work activity question

I am going to start a volunteering opportunity in September of this year at Walter Reed Army Hospital. Should I include this as a future work activity on my amcas application? Or should I just stick to activities that I have either already completed or am currently working on?

It would not be appropriate to list an activity you have yet to begin. But you can mention it in future update letters to your schools.

Can someone tell me more about these update letters? When do you send them? Can you continue sending LOR's after you have submitted your app? I started a new job and volunteering in March and I feel it is too soon to ask for a LOR but maybe if I haven't recieved an interview I would send some in around September/October when I feel my contribution to have been significant.
