When schools ask you to write down your animal/veterinary experience, how far back are you generally supposed to go? High school, middle school, etc?

For example, I did a bunch of hours (250+) at my local shelter in high school. Can I put that down?

It counts. You have to put down the general dates, so they will have an idea of how recent experience is.
 
One variation you may find is if you are applying to Cornell - they want everything you list as vet (and maybe animal) experience to have a rec letter associated with it. So if you had experience 10 years ago and can't get a rec letter from the place, it won't count for them.
 
I put down animal experience back from 2001 (I was 11), so definitely.
