Another LOR question

I was wondering for the LORs what exactly is considered a science class. This may sound like a stupid question, but I'm taking a food microbiology class (my major is microbio and this was one of the electives I could choose from) and I was curious if this could pass for a science class or is that something I need to ask the schools? Also, does physiology count as a science class?

Also, is it possible to send different rec letters to the different schools or the 4 that you use have to be the ones automatically sent to all of them? I ask this because I really would like to use a rec letter from one of my non-science classes but it doesn't seem likely considering the standard is one from an optometrist, 2 science, and 1 extra curricular to fulfill any of the schools.
 
Not sure if I'm helping but at my school any course code that doesn't fall under the science faculty (BIOL, CHEM, PHYS, SCI, etc.) isn't a science course.

You cannot choose which letters to send to different schools. You can make different essays tailored to different schools and designate accordingly.
