Isnt acetylcholine a neurotransmitter but not a hormone unlike epinephrine (which can be both)?

I'm not sure which part of your post you are asking about.
ACh is thought of as a neurotransmitter and not a hormone, just like norepinepherine. Epinepherine, on the other hand, is usually thought of as a hormone and not a neurotransmitter. Sure there are some minor counterexamples that we could argue about back and forth, but the big picture is that epi comes from the adrenal medulla and is spread everywhere via the blood, while ACh and norepi are sprayed from the tips of axons and are very targeted.
ACh isn't a hormone because it activates the parasympathetic system, which isn't really designed to be turned on all at once. If you self-administered it via IV your lungs would constrict and your blood vessels would dilate and you would die in a puddle of your own sweat and saliva and diarrhea.
Yeah, that's what I already know, but EK keeps saying "hormones like acetylcholine".
One example can be seen in the digestion section, where they say "Major hormones that affect the secretion of stomach juices are acetylcholine, histamine, and gastrin".
