If we plan on applying in June 2012, does that mean by the time we apply in June, we need to have ALL of our shadowing hours and volunteer hours done? If we are doing dental related activities throughout July and Aug 2012, can you update the dental schools with your ongoing activities?

You can but its easier to list what you are doing on the AADSAS portal. You can just say upcoming activity and list out the approx start and end dates. Emailing 10 or more schools with updated activities is messy and it might not make it into your file. As long as you put in everything you expect in AADSAS you'll be fine.

Additionally, you need a minimum of 100 or so shadowing hours for most schools. If you have that then you will be fine. All the other activities are simply "soft factors" that won't heavily influence your ability to get accepted into a school. GPAs + DAT matter significantly more. So dont worry about them that much. Focus on keeping a strong GPA going so you look like a competitive applicant.

Exactly. Get as much of it done as possible. Some schools will ask you what you're up to now, but most will go off what you did in the past and listed on your application.
