I am applying to a few medical schools that do not take AP credit to fulfill requirements such as English or Math. My plan was to take these courses at a community college at a certain stage of the application process (ex: if the school provides an interview invite). If I do not have these pre-requisites listed in my current/future coursework, then should I not apply to these schools?

You can still apply, and if accepted, take the missing classes during the summer prior to starting med school. The requirements are by matriculation, not by application or by admission.
