Applying Without a DO LOR?

How bad is it to apply without a letter from a DO? I'm trying to apply this cycle, but simply setting up a shadowing opportunity would take weeks, and unfortunately with my work schedule it may be hard to find anyone who can do weekends.
Some background:
3.6 cGPA, 3.3 sGPA from a a good private university in New England.
512 MCAT score (126/127/130/129)
Massachusetts resident
~600 hours of research experience in a biology lab and in a clinical setting.
~1200 hours of paid clinical employment
Strong faculty & MD LORs.
Would like to specialize after med school.

Any recommendations for schools? I'm almost definitely applying to UNECOM, but open to any suggestions.

There are a ton of posts on this. You can get in at quite a few places, some not BUT you get points for having one, so unless ur in nowhere Alaska or some such get one. It's sort of like adding an extra A to your GPA, why would you not.

Just be ready to have a good answer for "why DO?" in your interviews. I don't think the lack of DO letter is a deal breaker
