Hey, do I need to complete all of the pre -dental requirements before submitting an application? I ask this because I wont be taking organic chem 2 until my last undergraduate year. This is because I have started my chemistry and physics late

No.

In an example:
I will only have 5 out of 10 done for one school when I apply...they said even that was fine.

Check with the specific schools too, some say you need "X" amount of credits before applying or a certain amount of the pre-reqs completed.

While a school may say it's not necessary, it is probably more favorable to have them done. 1 or 2 unmet prereqs may be ok, but 5/10 is a stretch. After all, these are important classes that they can use to compare you to all the other applicants. If they're not done with final grades sent in, then they can't compare you very well.
