10/23/15 - Currently in week 3 of UNE Biochemistry. Studying Lectures, also reviewing Biology/MCAT/Chem material that relates to Biochem via KhanAcademy videos. Working part-time, volunteering.

1/27/16 - UNE Biochem class over.

1/27/16-2/18/16 - Working part-time, reviewing Khan academy videos & reviewing materials via MCAT review books.

2/18/16 - Quit my job, study full-time

2/18/16 - 4/22/16 - Review materials via books/KA.com, practice questions, 1 to 2 practice exams a week. I'm thinking 8 hrs/day 5 days a week...and if I feel up to maybe additional studying on weekends.

2/23/16 or push it back until 5/6/16 - Take MCAT

Any suggestions? How does this look?

Don't burn yourself out. Good luck. Be open to changing your schedule accordingly, and my biggest advice to you: do practice problems!
 
Don't quit your job just to study MCAT. You can certainly take some time off from work to study. Make sure you have something that will look good on your apps instead of just 'MCAT preparation.'

Plus, IMHO, two months of MCAT studying full time should suffice for DO schools.

I do not think I would quit working either because the application process and interviews are very expensive and if you have issues getting a job after, you are going to regret quitting. Maybe use vacation time or something or drop to part-time and then go full time after the interview or something but do not quit. Study around your work schedule, I have heard of a lot of people doing it
