Are DO schools ok with applicants using older letters of recommendation?

Your best course of action would be to contact the schools directly and ask if there is a cutoff for LORs. Some schools want them within the past two years....some want within the past five...others don't care. Other than the ADCOMs on this site, you probably won't get better answers than contacting the school directly (or looking on their websites).

Yes. Letters of recommendation can be used for up to two years from the date on the letters.

What should I do if my recommendation/evaluation letters are outdated by more than two years?

As a general rule, recommendations/evaluations dated more than two years before your application is submitted to AACOMAS are considered outdated. This can happen when you have been away from academia for a period of time. In any case, recommendation/evaluations from employers may be substituted for science faculty or for premed sources.
 
You'll be fine. My letters were all from a previous cycle and I was very successful on the DO side this cycle. It's more important that the letters are good quality and you represent what they say when you show up for your interview. How drastically could you really have changed in the short time since they were written.
 
Best thing is to contact your letter writers and ask for new letters. I had my committee letter from 2 years ago because I am currently working, but I got 4 newer letters (from PI in college, physician in college, manager and director from work)
