Is it poor form to ask a professor that would be a POI, but you know it would be a long shot because they get dozens of applications, if they have any recent graduates doing similar research at another institute?

You could get around this. Check their past pubs. Usually some of their frequent co-authors will have been grad students. Then see where those people are.

Thank you for the advice. That is what I've been trying, but it seems a lot of folks end up elsewhere besides academia though. :/ I appreciate your help!

If that ends up not working, I would just ask the professor, I mean it is your future.

I asked a few professors at the university I worked with about people in general they would recommend. Although I didn't do it in an email with people I didn't know, it may be worth putting in a blurb about how you are looking for recommendations, including former students, of people doing similar work. If you catch a nice person on a good day they may help you out. Other people are welcome to chime in if they think this comes off badly, though, since like I said I've never tried it.

Another option, although it's very incomplete, is to check out http://academictree.org/psych/ (PsychTree).
