Do I stop waiting for the vet school to call me off the alternate list, accept rejection, and start this year's VMCAS app and schedule to take my GRE again? (I know it's still early now, lol, but I want to be able to plan ahead so I'm not stuck in the pickle I was last year...)
 
Honestly? They can call you off a waitlist any time until like the 3rd day of classes (depending on the schools you're waitlisted at). This makes life really, really hard. I was an alternate last year AND this year, and I dawdled last summer. That's a bad idea.
Personally, I'd make plans as if you were rejected and going to be reapplying - more experience, classes, studying for the GRE, whatever you're going to do to improve your app between now and next fall. That way if you get off a waitlist, it's a pleasant surprise! If not, you're prepared for the next cycle.
 
Since all schools (I think) give a deadline of accepting an offer by April 15th, a lot of waitlists don't start moving until after that. I was on two waitlists last year, and by early May they seemed to be finished calling people off...there was still the possibility of that last minute August call, but that is not typical from what I understand.
So I'd suggest making plans for the summer and getting ready to re-apply, but holding off until mid-May before paying to retake the GRE.

I would need to improve my GRE score - I think(??) and publish my research.

The tricky part - which GRE do the schools want. LSU wants the New GRE. The test format changes this August. I haven't looked at what other schools want.

If there is a purgatory - it is being waitlisted
 
I was waitlisted on LSU's list until May 1st. They called me one week before I graduated from undergrad. Around April 1st I started preparing to take summer classes to finish pre reqs I had needed for the previous cycle for one of the schools I wanted, so basically I had applied and got accepted to those schools and was about to enroll in the courses I needed when I got called by LSU. It's not too early around the beginning of April to start preparing, but I wouldn't cement anything until around the beginning of May. It can also (and this is really not terribly uncommon) be late summer before some people are called, just depending on how the lists go and whoever drops out after the deadlines.

Good question SWells. I hadn't thought that far into it yet. lol. I also need to retake my GRE... Hmmm...
